Ingredients

  • 1 cup of ground almonds (150 g)
  • 4 tablespoons of sugar (60 g)
  • 1 cup icing sugar (120 g)
  • 3 egg whites
  • ½ tablespoon of cinnamon powder (8 g)
  • ½ tablespoon of lemon juice (8 ml)
  • 1 tablespoon of butter (20 g)
  • 1 tablespoon of wheat flour (15 g)

Preparation

  • The first thing you should do is take a medium bowl and mix the ground almonds with icing sugar and cinnamon powder.
  • Then gradually add the whites and lemon juice. Beat everything with a hand whisk until it has reached a sticky but compact consistency.
  • Then, take a baking sheet, grease it with a little butter and sprinkle a little of the flour so that the Bilbao macaron doesn’t stick.
  • Once you get the desired texture of your candy, take a little dough and start making some balls with it.
  • Then put the sugar on a plate and cover each sugar macaron all over its surface. Try not to make balls too big so they can all fit on the baking sheet or tray.
  • Before placing the pan in the oven, crush (just a little) the balls. Don’t worry, they will grow when baked.
  • Set the temperature to around 180 or 190°C and bake for 10 minutes, until the macarons rise and brown.

French macarons or macarons are a kind of colorful biscuits made with egg whites, icing sugar and ground almonds. Hence the confusion with the Bilbao macaron, because its ingredients are practically the same, but with the difference that the latter has no filling.

Ingredients for macaron

  • 4 egg whites
  • 2 cups of icing sugar (240 g)
  • 1 ½ cup of ground almonds (225 g)
  • 1 pinch of salt (5 g)
  • 2 drops of vegetable dye

  • 2 cups of icing sugar (240 g)
  • 1 cup of butter (200 g)
  • 1 tablespoon of vanilla essence (15 ml)
  • 2 tablespoons of whipped cream (30 ml)
  • 1 tablespoon of lemon peel (15 g)
  • 1 scoop of cocoa powder (15 g)

French macaron preparation

  • To start, in a bowl beat together the egg whites with salt and icing sugar.
  • Then add the ground almonds and vegetable coloring (the color you want). Once ready, place this mixture in a pastry bag.
  • Then line a baking sheet with parchment paper and shape the macaron with the help of the pastry bag. Place them well apart so that they don’t stick together. Go to the oven.
  • Finally, bake at about 200 °C for 10 minutes. After the indicated time, remove them and let them cool while filling.
