Ingredients

  • ½ unflavored gelatin envelope
  • Half a cup of passion fruit juice (125 ml)
  • 1 packet of cornstarch cookies (250 g)
  • A can of condensed milk (200 g)
  • One can of heavy cream (150 g)
  • ¼ cup of whole milk (60 g)
  • 1 large passion fruit (60 g)
  • One tablespoon of sugar (10 g)
  • Half a tablespoon of cornstarch (5 g)
  • ½ cinnamon stick (2 g)

Method of preparation

  • First, in a blender, beat the juice of the passion fruit, the condensed milk, the cream and the whole milk until you get a smooth cream.
  • Separately, hydrate the gelatin with about 60 ml of hot water. Then add to the cream and beat again so that they are well integrated.
  • Then place the cookies on a large baking sheet so that it is well covered.
  • Then add the passion fruit cream over the biscuits, distributing it evenly, and then place the baking sheet in the refrigerator for an hour. While cooling, prepare a passion fruit syrup to add to dessert.
  • To do this, cook the crushed remains of the passion fruit pulp with the sugar, water and cornstarch, stirring to dissolve the ingredients well.

With this syrup you can get the most out of the passion fruit. Also, you can add cinnamon for flavor and garnish. To finish the recipe, take the pan out of the refrigerator and serve the passion fruit dessert along with the syrup.

2. Chocolate brownie with passion fruit and banana ice cream

This delicious brownie combines the intense flavor of chocolate with the freshness of passion fruit. Although it’s a little difficult to make, you can serve it at lunch or dinner in a group. The ingredients needed are:

  • ¼ of a banana (20 g)
  • 10 ml of aged rum
  • A can of heavy cream (145 g)
  • One cup of sugar (200 g)
  • 2 eggs
  • 5 tablespoons of maple syrup (45 g)
  • One teaspoon of corn glucose (5 g)
  • Passion fruit pulp (100 g)
  • One ¼ bar of butter (125 g)
  • ½ cup almond flour (60 g)
  • One dark chocolate bar (110 g)

How to prepare the brownie

  • First, melt 70 grams of chocolate and all the butter.
  • Separately, beat eggs with 150 grams of sugar and almond flour. Then add little by little to the previous melted mixture.
  • Once you get a smooth dough, place on a baking sheet and bake at 200°C for 15 minutes.

How to prepare ice cream

  • While the brownie bakes, prepare the passion fruit ice cream; just boil the fruit pulp with maple syrup and glucose.
  • When the ingredients are well mixed, let them cool in the open air.

How to prepare banana caramel

  • To prepare banana caramel, heat 25 grams of sugar in a pan until it turns to caramel.
  • Then add the banana and flambé with the rum.
  • Finally, add 45 grams of cream and mix well before beating and straining.

How to prepare chocolate cream

  • The last part to be made for this passion fruit dessert is the creamy chocolate. Start by making a custard, mixing the yolks with the remaining sugar.
  • On top of this mixture, add the remaining 100 grams of sour cream and mix well until you get a liquid cream, with a texture similar to that of a pudding.
  • Then heat the mixture over a very low heat until it thickens a little. Then pour in the rest of the chocolate.
  • Once melted, remove it from heat and let it sit for about 12 hours.
